Bottled-In-Bond Bourbon
Kings County is among the very first craft distillers to release a style of whiskey that can be considered the highest class of American Whiskey. Bottled-in-Bond is a designation that refers to American whiskeys (and some brandies) that are distilled, aged, and bottled entirely at one distillery, from barrels filled in one season, by one distiller. Furthermore, the whiskey must be four years old and bottled at precisely 100 proof. In the old days, this was a way to protect the consumer from brands that were merely bottling up whiskey from other distilleries and blending or adulterating that whiskey. In an era when consumers still sometimes have a hard time knowing exactly where their whiskeys actually come from, bottled-in-bond best expresses the advantages we enjoy by making all our whiskey in-house from grain to bottle.
Batch 13 is a 7-year bourbon with our classic high-malt, 2-ingredient mashbill. This batch consists of only the finest two 53-gallon barrels from what remains of the Spring 2017 distilling season. Easily our most limited annual Bottled-in-Bond release ever, the blend of these two barrels has produced a richly layered nose of raspberry, clover honey, toasted coconut, lanolin and cardamom alongside an integrated palate of creme brûlée, pomegranate, plum, and sustained, balanced oak. By adhering to the strictest category of world spirits, we aim to offer a transparent snapshot of our whiskey-making process as it was seven years ago, and a time capsule anticipating the future of our aged inventory.

Traditional Techniques
Kings County embraces a variety of whiskey cultures and blends them into creative, distinctive whiskeys. We distill for quality over yield using true pot stills manufacturer in Scotland (Forsyths) and Kentucky (Vendome).
Mashbill
We source directly from farmers in NY and maltsters in the UK because we believe that good choices start from the very beginning. We source our grains locally in NY when we can because we believe distinctive ingredients make better whiskey. Here's a breakdown of what grains goes into making this product.
80% Corn
We source our corn from Lakeview Organic. The same farmer we've been using since day one. Klass and Mary-Howell Martens have cultivated a generational farm that grows 100% organic, non-GMO corn right here in the state in the Fingerlakes region.
20% Malted Barley
Our grain comes from Thomas Fawcett Maltsters in the UK. Specifically, we use Golden Promise malted pale barley. Our high-malt mashbill borrows more from Scotch whiskey than traditional bourbons who typically add a flavoring grain such as rye or wheat.
